I'd like to describe a meal I had about two years ago at a small restaurant in Istanbul — a city I was visiting for the first time and which exceeded every expectation I had. The restaurant was nothing particularly grand — a family-run place in the Balat neighbourhood, with maybe eight tables, walls covered in old photographs, and a menu that existed mainly as a courtesy because the owner, an older woman, had fairly strong ideas about what you were going to eat. We were a group of four who had found it by wandering off a tourist map, which is often a reliable method. We were served a succession of small dishes — meze, I suppose, though it felt more like improvisation than a set menu. There were things I couldn't fully identify but ate gratefully: something cold made with aubergine and yoghurt that had a smokiness I'd never encountered before, flatbreads that arrived warm and slightly blistered from a wood-fired oven, stuffed vegetables with a sweet and savoury complexity that shouldn't have worked but absolutely did. The food was so precisely seasoned that very little needed to be added to it. What made the meal memorable was not just the food — it was the feeling of genuine discovery. We had stumbled into a place that wasn't performing authenticity for visitors; it simply was what it was. The owner brought out dishes she thought we might like without being asked, seemed quietly pleased when we responded well, and tolerated our attempts at communication with dignified amusement. I still think about that aubergine dish sometimes. I've attempted to recreate it twice and failed both times.
